Kristina is among a whole subculture of fruitarian/raw foodists that has a YouTube channel and promotes eating raw and living a healthy lifestyle. I find her channel both informative and entertaining and love to throw on one of her videos to learn about a great new recipe or simply a new way to combine different kinds of foods in a healthy way.
Lately, I’ve been obsessed with zoodles. And if you don’t know what zoodles are, they are noodles made of zucchini after being noodle-ized [I invented this word] by some sort of tool. The tool that I use is called the Veggetti. It was a gift from my dad & stepmom for my birthday last? year.
It’s SO incredibly easy to use and produces wonderful noodles. And can be purchased for less than $10. SCORE.
Lately I have been using one of two sauces to eat with my zoodles; a sundried tomato & garlic sauce, or a pesto sauce. I have to be honest. The pesto is coming from a green packet that says “Pesto” on it, which I simply pour about half of onto my zoodles and add some hemp oil (or whatever oil you have, I have hemp because it was on sale for $10/32 oz. compared to $17 for olive oil (both organic of course).
My pesto “pasta” looked like this:
It tasted as good as it looks. Honestly. Zoodles are amazing. Annnnd they’re made of zucchini. Yussss. Now I’m not gluten free or anything, but when I eat a bowl of regular pasta I feel pretty lethargic afterwards and either have to go take a nap or just chill out for a while. Pasta makes me feel cloudy and lazy. But when I eat a large bowl of zucchini? A bowl the size of half of a watermelon? I feel like singing and dancing. And so I do. I do the zoodle dance. But really, it’s kind of wonderful. Zucchini absorbs the taste of whatever flavor you coat it with and being in noodle form, gives you the comfort of pasta upon eating it.
