Ice cream on toast

Yum. I love vegan breakfasts. The ones I choose are always so sweet and carb-filled and delicious. 😀

This breakfast in particular is so easy and so satisfying.

Vegan Ice Cream [on] Toast

2 pieces of Ezekial 4:9 sprouted grain bread

1 T unsalted ground peanut butter

1 T jelly or jam of choice

For ice cream:

3 small/medium frozen bananas

1 splash of vanilla extract

a pinch of shredded coconut

Directions

Toast your bread. Spread with PB & Joy. And jelly. 🙂

Slice & toss frozen bananas and vanilla into a high speed blender with 1/4 cup water. Blend into ice cream. Top with coconut flakes. <3

Voila. Breakfast is ready.

Seriously, vegan bread is the bomb. I didn’t eat bread for a while there because I didn’t find one I liked. Thanks Ezekiel 4:9! 🙂

And let’s not pretend there wasn’t any toast dipped in the ice cream.
